I’ve noticed that users can leave reviews in several places: 1) directly in a SERP (by clicking “Feedback” where reviews are shown); 2) in Google+ (by choosing Local from the main pull-down menu); 3) on a Google Place Page. I’m assuming that ALL of these methods contribute to a business’s Google review count — is that correct?

With that much visibility, it’s no wonder Google’s counts would grow faster than any other review site’s.

That’s correct. There are also other areas where people see prompts to write a review, like in the Google Maps interface, and when there’s a Google Map embedded on a business’s site. Many doorways in.
